About the product

The Samurai Spirit: Rich Japanese-Style Umami Sauce
Elevate your culinary repertoire with this Samurai Sauce, a sophisticated Japanese-style condiment that defines "savory meets spicy." While traditional Belgian Samurai sauce leans heavily on heat, this version honors the Japanese palate by prioritizing a deep, umami-rich profile balanced with a refined peppery finish.

The Flavor Profile
The foundation is a thick, custard-like Japanese mayo—richer and eggier than its Western counterparts. This base is infused with shoyu (soy sauce) and toasted sesame oil for earthy depth, while a blend of red chili and a touch of wasabi provides a clean, rising heat. A hint of rice vinegar adds a delicate tang, ensuring the sauce remains vibrant rather than heavy, cutting through fats with precision.

Perfect Pairings
Fried Delicacies: The ultimate companion for Chicken Karaage, tempura shrimp, or crispy tonkatsu.

Gourmet Burgers: Slather on a brioche bun to complement a wagyu patty or a grilled portobello mushroom.

Street Food Classics: Drizzle over takoyaki or okonomiyaki for a modern, spicy twist on tradition.

Bold, disciplined, and undeniably delicious, this sauce brings the precision of Japanese flavor to every bite.

INGREDIENTS

Mayo base, chilli paste, soy or garlic notes (typical Samurai flavour profile).

Samurai Fries: Creamy Heat & Umami

Ingredients

For the Samurai Sauce:

Mayonnaise base (provides a velvety, rich foundation)

Fermented red chili paste (adds vibrant color and building heat)

Soy sauce (for umami-rich savory notes)

Garlic (pungent and aromatic)

Vegetable oil (ensures a silky texture)

Vinegar (adds a hint of acidity to cut through the richness)

For the Fries:

500g Frozen or fresh-cut potatoes (skin-on recommended for extra crunch)

Vegetable oil (for frying)

Fine sea salt

Optional garnish: Thinly sliced spring onions or furikake

Method

Whisk the Sauce: In a medium bowl, combine the mayonnaise, fermented red chili paste, soy sauce, and minced garlic. Slowly whisk in a touch of vegetable oil and vinegar until the mixture is completely smooth and reaches a vibrant orange hue. Set aside to let the flavors meld.

Prepare the Fries: Heat your frying oil to 180°C. Fry the potatoes in batches until they are deeply golden and crispy on the outside while remaining fluffy inside.

Seasoning: Immediately transfer the hot fries to a large metal bowl lined with paper towels to drain excess oil. Toss them with a pinch of sea salt while still hot so the salt adheres.

The "Toss": While the fries are piping hot, remove the paper towels and drizzle a generous portion of the Samurai sauce over them. Use a pair of tongs or a large spoon to toss the fries gently, ensuring each piece is lightly coated in the creamy, spicy mixture.

Serve: Transfer to a serving dish and top with an extra dollop of sauce for dipping. Garnish with spring onions if desired for a fresh contrast to the heat.
